It took me back memory lane from two very good visits to Georgia. The Georgian cusine and wine is so unique and wonderful. It is food culture with a long history and a melting pot of different cultures.Georgia is located on the Silk Road. The Silk Road was a network of trade routes connecting China and the Far East with the Middle East and Europe. It has had an impact on local cuisine in Georgia. The kitchen is also influenced by the neighboring countries and the wars that have been in the area which have added ingredients and cooking skills. The food is directly influenced by the Turkish cuisine to the west and the Persian cuisine to the east. The menu Peliphonia X Den Vandrette 12th August:“Fermented vegetable plate” .. very good“Jonjoli tempura with alpine leek aioli” … so yummi“Sulguni (a white cheese) leaflets with whey bulgur and wild goosefoot” was realy taste“Tomatoes with alpine herb pesto” 👌🏽“Pkhlovani: fermented herb and cheese pie” a very nice Georgian bread serving.“Purslan with kakhetian oil” and typical use of sunseed oli. “Poched catfish with coriander vinaigrette”A real tasty stew: “Stinging nettle, wheat berry and chicken stew. Marigold and walnut paste stuffed veggies”really good and with estragon.“Pumpkin and potato khinkali with sea buckthorn and harissa” came late and cold – but good idea, and hard to do a popup in a perfect way. It was a great evening.
